Agnès shares with us her favourite recipes: lemon tart.
1/ The crust:
- 200 grams of flour
- 200 grams of butter
- A pinch of salt
- A glass of warm water
Pour the flour and the salt in a large bowl
Add the butter by small pieces
Mix briefly with your fingers
Add the warm water
Make a ball out of the mixture
Refrigerate in a bowl for at least an hour.
Flatten the dough with a rolling pin to make it thin (4 to 5 millimetres).
Lay it down in a pie plate.
Pierce it with a fork to prevent it from rising.
Put it 20 to 25 minutes in a 200° Celsius oven.
2/ The filling (cream):
- 3 spoonful of melted butter
- 3 spoonful of flour
- 270 grams of sugar
- The zest of one lemon
- The juice of two lemons (or 1 and a half)
- 2 eggs
Mix it well
Pour the filling on the tart when its just cooked
Bake for 10 to 15 minutes
Even better! Mix an egg white with some granulated sugar, pour it over the tart and grill it 3 more minutes.
